Cooking With My Community Share – Week #7 (Bonus Recipe Included!)

It’s fair week! I’ve been super busy all week and the daily heat index has been over 100 – so hot and humid! Not a great week for kitchen things.

Needless to say, I ate a lot of salad this week and one quiche (a new favorite in our house!)

This quiche had arugula, green onion, broccoli and bacon. We were trying to use up quite a few veggies. Very delicious.

This post isn’t following my normal format and I apologize for that but I am going to share a bonus recipe with you that didn’t come out of my CSA but I entered in the fair this week.

Illinois Honey Cookies

I made these to enter the honey baking contest at the Heart of Illinois Fair. They are delicious and really paired well with my mid-morning tea.

Here’s the recipe so you can try them yourself!

Illinois Honey Cookies

7 Tbsp local IL honey
3/4 cup oil
1 egg
3/4 cup sugar
3 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp gingerbread spice*

Preheat oven to 390 degrees. Mix honey, oil, egg and sugar. In separate bowl combine flour, baking soda, cinnamon and spices. Add flour mixture to honey mixture – blend to form dough. Take 1 tsp of dough and roll into ball. Place on cookie sheet. Bake 8 minutes or until the bottom is golden brown.

I also used my new Illinois cookie cutter for some of them. These aren’t the best cookies to make shapes out of because of the consistency of the dough but I still think they are pretty cute.

*BONUS RECIPE – Gingerbread Spice
I looked at 2 different stores trying to find gingerbread spice before I realized that it was easier to just get the mix of spices and make it myself. I made some up and am storing it in a small mason jar to use for recipes. Here is the mixture I used but feel free to tweak it according to your own personal tastes.

2 Tbsp ground allspice
2 Tbsp ground cinnamon
2 Tbsp ground ginger
1 Tbsp ground cloves
1 Tbsp ground nutmeg
A pinch of ground pepper

Mix and store in an airtight container.

These came together really quick and were a great treat to have. I will be making these again soon for sure. I hope you enjoy!
