As you may have seen in my post earlier this week, I am currently completely preoccupied with preparations for the Heart of Illinois Fair which is next week. As such, I don’t have much by way of exciting recipes to share with you this week.
I am taking a much needed staycation from my full-time job next week so I am hoping to wow you with the recipes that I prepare.

What I Made:
Vegetable Stir Fry
CSA Ingredients Used: Carrots, Radishes, Snap Peas
This is SO EASY! I cut up the carrots and radishes and then threw them along with the snap peas into a skillet where I had melted some butter. Yum yum. I’m not big on rice so I served this over some quinoa that I had cooked up along with some grilled chicken that Nick had done earlier this week.
This is such a great way to just use up whatever happens to be in the fridge. I don’t think there is a wrong way to do stir fry.
Blackberry Banana Kale Smoothie
CSA Ingredient Used: Kale (from last week’s share)
This was me building on last week’s Blackberry Kale Smoothie which was a little bland. Add in some banana and milk and it is so much more satisfying! Anything to disguise those greens!
I just have to remember Thumper’s wisdom from when I was a child. Eating greens is a special treat…
Raw Snap Peas
Alright, I know this isn’t a recipe. But seriously, snap peas are SO GOOD. I like to just dip them in ranch and snack on them. Nothing wrong with enjoying vegetables in their completely natural state!
